If you're photographing a subject outdoors at sunset, place it in warm tones of sunlight and switch the white balance setting to daylight or sunlight to emphasize those warm tones. Using a shadow adjustment will also warm up the colors in the photo. Spot metering is probably the best choice here, although if you place your subject in the middle of the frame, center-weighted metering is also a good choice.
